Dr. Victor F. Zevallos, from the Department of Gastroenterology, King's College London, United Kingdom, evaluated the in-vivo effects of consuming quinoa in adult celiac patients. Quinoa, a highly nutritious grain, is traditionally recommended as part of a gluten-free diet.
